Aspectos nutricionales y metabólicos de la fibra
Definición de “fibra”
Fibra es la parte estructural de los vegetales que no puede ser digerida por el ser humano
La fibra alimentaria,
que originalmente se definió como
un componente de alimentos vegetales
indigerible para el hombre,
es sin embargo,
un concepto nutricional.
Está presente en una amplia gama
de alimentos y productos alimenticios muy diferentes entre sí,
tanto por su composición química
como por sus propiedades funcionales
y efectos sobre la salud.
