Frugal Family Weekly Menu – 1 Creamy Crockpot Chicken Mexican Posole
Marinated Flat-Iron Steak Cheesy Chicken & Noodles

Crockpot Pork Roast
Shopping List
o 2 - 2.5 pound bags individually frozen boneless, skinless chicken breasts or strips
o 1 whole chicken (5-6 pounds)
o 1 – 2 to 2 ½ lb flat iron or flank steak
o 1 (family size) 2-4 lb. pork roast
Canned & dry goods Spices
o 3 cans large white hominy Red pepper flakes
o 1 cup mayonnaise Garlic powder
o ¼ Cup Worcestershire Italian seasoning
o 2 Tbs. (apple cider) vinegar Salt & pepper
o 1 bag egg noodles (or other pasta like penne) 1 tsp. Cumin
o 3 cups dry rice (white or brown) *1 package dry onion soup mix-optional
o ½ - 1 Cup hot sauce (like Texas Pete)
o 2 Tbs. flour
o *1 can Cream of Mushroom –optional
o *Durkey onions – optional
Fresh foods
o 6-8 cloves garlic (divided into ½) 1 package cream cheese
o 1 bunch green onions (divided into ½) 1 block cheddar cheese
o 1 jalapeno – seeded & chopped 1 cup milk
o Cilantro – fresh sprig 3 onions (1 for broth, 2 chopped)
Notes
o Red pepper flakes

Creamy Crockpot Chicken - fresh broccoli (steamed) or fresh asparagus drizzled with
olive oil & baked in the oven at 350 degrees for 10-20 minutes
Mexican Posole – rolls and side salad
Marinated Flat-Iron Steak – baked potatoes or steamed cauliflower with butter & fresh
baby carrots
Cheesy Chicken & Noodles – rolls and fresh asparagus
Chicken & Rice -black beans or chopped tomato, onion & cheese garnish for 1 dish meal
Cheesy Buffalo Chicken – side salad and steamed broccoli
Crockpot Pork Roast – rice (or roasted potatoes & carrots or steamed cauliflower for
gluten free option) & roasted baby carrots.
Side Dish Ideas

Ingredients
Frozen Boneless, Skinless chicken breasts or strips (enough for the family)
Mayonnaise – approximately 1 cup
Garlic powder
Italian spice mix – or other favorite spice mix
Salt & pepper to taste
¼ Cup water
Instructions
Pull from freezer & slather each individual piece of chicken, heavily, with
mayo & place into crockpot (add ¼ cup water to bottom of crockpot)
Sprinkle garlic and spices across the top of mayo covering
Cook 6-8 hours in crockpot
*Serve with a fresh green vegetable such as steamed broccoli or asparagus drizzled in olive oil
& baked and/or pasta.
Creamy Crockpot Chicken

Ingredients
Homemade chicken stock; Chicken (or pork-shred or chunk small); 1 tsp. Cumin;
3 cans large white hominy; 2 – 3 cloves minced garlic
Garnish
Cilantro- chopped, Jalapeno-
deseeded & chopped, Green
onions- chopped
*Serve hot in bowls and add garnish – salt & pepper to taste. Enjoy rolls, or with side salad.
Directions
Add first 5 ingredients
Simmer for an hour (do not hard boil or hominy will come apart)
Skim fat off the top Salt and pepper to taste
Homemade chicken stock
Cook full chicken, with skin & bones, onion, garlic
powder, and celery if available – bring to a hard
boil then turn down the heat and simmer for at
least an hour. Strain broth, pull chicken from
bones & store 1/3 meat in gallon bag for
additional meals. Use 1/3 chicken for Posole.

Flat-Iron Steak
To cook (pick your favorite version)
Thaw in refrigerator - Grill on each side 2-5 minutes (for rare to medium well
depending on thickness) or cook in skillet at medium heat until internal temp 135
degrees to 140 degrees F (60 degrees C), about 5 minutes per side or cook in oven
about 6 inches from broiler for 6 – 8 minutes.
From freezer to crockpot: Steak & gravy - Add 1 oz package onion soup mix,
1/2 c water, 1 can cream of mushroom or cream of whatever soup – Cut steak into
individual servings, add everything to crockpot, cover & cook 6-8 hours.
*Slice thin across the grain. Serve with baked potatoes or steamed cauliflower with melted butter,
and fresh baby carrots with ranch.
Ingredients
Flat-Iron Steak (or similar cut)
¼ Cup Worcestershire sauce
2-4 chopped fresh garlic cloves
Chopped chives or green onion
Tsp. red pepper flakes
2 Tbs. (apple cider) vinegar
1 Cup olive oil or coconut oil
Instructions
Mix Ingredients together in a
bowl
Place steak in gallon size freezer
bag -after tenderizing meat
Pour mixed ingredients over the
steak, rub it in & seal bag
Freeze or cook

Homemade Cheese Sauce Instructions
Use a Tb of olive oil or coconut oil in a pan with a pat of butter – mix in 2-3
Tbs of flour
Add in 1 cup of milk and stir until smooth as possible and then add another
cup of milk do same
Add 2 cups of grated cheese – sharp cheddar makes a great sauce
Mix until med thick consistency – salt and pepper
Instructions for Cheesy Chicken & Noodles
Add cheese sauce to cooked/ drained pasta
Add 1/3 of chicken pieces out of reserved bag leftover from whole chicken
Optional: Place in casserole dish, sprinkle with Durkey onions and brown in
oven at 350 degrees for 5- 10 minutes.
Cheesy Chicken & Noodles

Ingredients
3 Cups rice
1 Onion – chopped
Big pat of butter
1 Cup grated cheddar cheese – optional
Tomato chopped – optional
Green onion chopped – optional
Chicken pieces (from reserved bag – leftover from whole chicken)
Directions
Cook rice according to directions, brown ½ onion in butter
Once rice is done, mix in cooked onion and add extra pat of butter
Salt & pepper to taste
Optional- top with cheese, tomato, and fresh onion
*Serve with side of black beans

Directions
Rub roast with olive oil
Add garlic powder & Italian spices
Flash brown in pan – high heat – each side
Add to crockpot with 1 inch water in bottom, Salt & pepper, Add onion
slices & baby carrots & chopped potatoes
Cover & cook 6-8 hours
*Serve with rice, roasted potatoes & carrots or mashed potatoes or cauliflower & butter

Big pork roast (2-4 pounds)
Garlic powder
Italian spices
Olive oil
Crockpot Pork Roast

Ingredients
1 bag frozen chicken breasts or strips
1 package cream cheese
½ - 1 cup hot sauce (Texas Pete)
1 cup grated cheddar cheese
Instructions
Mix cream cheese and hot sauce together in bowl
Add ½ cup cheddar cheese – mix well
Spread each piece of frozen chicken heavily with cream cheese mix, add to
casserole dish
Sprinkle with cheddar cheese
Bake in oven at 375 degrees for 40 – 50 minutes (read chicken for time)
*Serve with side salad & steamed broccoli
