Hundreds birds of colorful feathers
embellish the place; I turn my head
to the sky and I see a big pink
spatula flying at full speed like a
shooting star in the sky, the water
is the dancing floor of this end-
less dance of colors harmonized
by the nature’s orchestra. In the
background as enigmatic scenery
you can see the Cerro de Pijijiapan
(Pijijiapan’s Hill) being devoured by
the clouds.
espátula rosada volar a toda velo-
cidad como una estrella fugaz en
el firmamento, el agua es la pista
de baile de esta interminable dan-
za de colores armonizada por la
orquesta de la naturaleza. Al fondo
como enigmática escenografía se
observa al Cerro de Pijijiapan ser
devorado por la nubes.

15 Y 16 DICIEMBRE, PIJIJIAPAN, CHIAPAS 2012
Martinique Bird Festival, The Chocohuital migratory bird sanctuary

hear the sounds of the endless love bet-ween the waves and the beach, the cool sea breeze ruffles my hair as while little fish venture to play between my feet. Sit-ting at the banks of the estuary, I take an
aromatic cup of coffee while I enjoy the tran-quility and spectacular beauty of the sunrise. In the warm morning I walk a few steps and lean back to relax on a comfortable ham-mock. Chocohuital is a paradise full of fun. There are boat tours, estuary fishing, water sports, walks on the beach and more.
In December, this area of the Bios-phere Reserve La Encrucijada (Crossroads) is painted in colors with a fantastic show, the 3rd. Martinique Bird festival. After taking a fas-cinating boat trip across the estuary’s tunnels you arrive to a lagoon that is the home and gives the name to this feast of nature. from the observatory, you will see hundreds of birds (tiger heron, kingfisher, curlews, plovers, Redshanks, gulls, pelicans, hawks and more) nourishing and nesting. Almost all of them did a monumental journey from Alaska, United
States and Canada to delight you with their dances and songs in this parade of colorful shades.
Among the activities carried out there you can find the release of baby igua-
nas to repopulate the area. you will also see alligators, crocodiles and turtles taking sun baths on the banks of the estuary. On the beach, near the Mapache (raccoon) mouth bar there is another shore-bird observatory; at this area a spectacular phenomenon is produced found in which the sea and the estuary water meet, a meeting harmonized by the sounds of the sea, the wind and the whistling of birds.
you can enjoy delicious seafood dishes;, Don Benjamin, the expert cook at the Aquatic Sports Center who is better known by the locals as “El Canal” (The Channel), cooks a delicious foiled fish fillet stuffed with shrimp cooked in the traditional way on a bonfire. If you want a delicious seafood broth, stew or ranch chicken mole at the Hosting Doña Cha-ve, where Mrs. Isabel Sequeda prepares them with a unique flavor; you can also enjoy the specialties of the restaurant “Las Brisas” (the Breezes) at the Beach Club Refugio del Sol or
get close to one of the Palapas (Square open cabins with coconut palm ceilings) on the shores of the estuary.
During your boat ride to visit the turtle camp Costa Azul, you will enjoy some majestic landscapes framed by the yellow mangrove, it is unique to this area of the reser-ve. At dusk, you can contribute to conserva-tion by the releasing of hatchlings. you will see the hatchery and you will meet with the tech-nician Carlos Ochoa Rojas, who manages the place; he gives awareness talks to residents and tourists; he will describe to you the life of these animals that can live up to 100 years. It is a noble work in which these sea men risk their lives to save sea turtles, so that our beaches remain hosting the miracle of life.

alking through its aisles is like taking a literal trip to the past of the Jovel Valley; while listening to the music of the phonogra-
ph, you can take a picture of yourself wea-ring a helmet and a Spanish sword. you can call home to greet using a phone with more than 90 years of age; you can sew with a tiny sewing machine or play a song on the sma-llest marimba and you may shoot some craft guns created by the hands of san-cristobalences (San Cristobal de Las Casas native people). This is a museum from people for the people and all the ob-jects that are displayed at the place work properly. The museum has its origins at the Miguel Muñoz foundation, it was a project that began as a casual conversation between the Engineer Miguel Angel Muñoz (the museums director and Chronicler of this colonial city) and Dr. Jan de Vos. The young team of the Engineer Mi-guel devoted so much effort in researching and obtaining parts for the museum and thanks to their efforts, this cultural and historic rescue of San Cristobal de Las Casas was possible. Here you see, listen and interact with
History. Did you know that there was a time in which the city’s Central Park’s flowers that adorned the gardens were poppies?
Inside its adobe walls 60 cm thick and under the original ceiling from 1820, in which you can still observe its old beams and leather ties, lives the metamorphosis of what once was Hueyzacatlan. It is a fun ride through the history from the XVI to XXI cen-turies, in easy texts you will find very curious data that I bet you do not know. Did you know that the first song that was recorded in the first device that played music was “Mary Had a Little Lamb?”
In this fascinating exhibition you will see extremely rare pieces; it is the first museum in Mexico that exhibits a bill from the Bank of Chiapas. There are only two ope-rating phonographs in the country and one of them is in this place, it is 106 years old. If you want to know who was the first Mexican to make a recording in the “talking machine” you must visit the museum. find out who was the first Chiapanecan who won in the lottery.
you will know about the first bike that came to San Cristobal de Las Casas, as well as the first telegra-ph, the first feature
film, the first typewriter in the city, the first newspaper in
Chiapas and more. Get to know the ten origi-nal neighborhoods of this magical town with its arts and trades, such as the elaboration of wrought iron products at El Cerrillo, the baking of bread in San Diego and the flowered cand-les at La Merced.
The first plane and the first car that arrived to San Cristobal de Las Casas; the first traffic regulations that was issued at national level; all the secrets that are behind the name of the city, among other curiosities. you will learn many interesting facts to brag about with your friends at the bohemian nights at any club in town.

Tercer Reich, Adolf Hitler.

he got to accumulate a vast wealth. The com-pany store at the farm got its name from the simple reason
that peasants only placed a line in the book list, due to the reason that they did not know how to read or write.
Local people associate the name of Eva Braun (sister of Don Enrique), to the wife of whom was the supreme commander of the Third Reich, Adolf Hitler. The people of the region believe that the construction of the house was ordered by the ruler of the III German Empire as a gift to his couple. Some people even say it was an alternative escape route for Hitler and that the place was even visited several times by this controversial character.
The elders of the region, say that Don Enrique Braun had malignant pacts with a man named Juan (John), at night, he arrived to the Casa Vieja (Old House) dressed in black, riding a horse of the same color; this dark character came to give money to the German. In ex-change for the gold, the farmer gave him back the heads of some of his employees.
Around the Braun House, there is a beautiful garden, adorned by a large magnolia tree, 92 years old; it is unique in the region, this tree was planted at the beginning of
the construction of the house. We can also observe a large pot in which the food of the farmers of this aromatic grain was prepared. When doing the journey through the narrow corridors of the resort, there are other objects from those times, such as two safes where the farmer kept his money and his important documents. Braun introduced German ma-chinery and techniques that made the coffee
cultivation in the region thrive.
During Cardenas’ Pre-sidential Term some land belon-ging to the farm were distributed to 187 farmers creating the ejido
(common land) Santo Domingo. That is the reason why Don Enri-
que Braun abandoned coffee pro-duction and went back to his birth place.
Next to the Braun House we can find the pool and wading pool where children spend incredible time.
The old cellar, where Don Enrique kept his best wines, nowadays it is a minima-list video- bar with an international bar. It is said that at midnight Don Enrique received the call of the devil and he used to go down to this place where a secret passageway existed, a tunnel that ended at Huixtla’s Stone and with
oing the ascent from the coast to these high places is an extraordi-nary experience. Within minutes the climate changes, the vegeta-tion transforms and the landscape
shows us scenarios that are seen only in a few places around the world: huge waterfalls that flow over colossal stones, which appear to have been placed there by giants from mythical times.
Enrique J. Braun Henzen landed in Guatemala at the Port of Champerico, in the company of his sister Eva Braun. When he arrived, back in 1911, to the lands of the farm Santo Domingo, there the precious coffee bean was al-ready produced, thanks to the beneficial weather and soil conditions. fascinated by the nature and the prosperity of that native land, this German farmer bought this planta-tion from a Spaniard and in 1920 he began building the Braun Mansion, which was com-pleted after nine years of hard work.
Braun was a very rigid man, he made children, women and men work from dawn to dusk. By using its own currency and a company store called “de raya” (of a line),

other arm facing the Pashtuda Stone, 40 minutes away from the Braun House. The peasants believed that the source of his wealth was due to this pact with the devil. Another of the myste-ries involving the Great House is that at night there is a ghost that lives at the resort.
What it used to be Enrique Braun’s business meeting room, is now a Coffe Museum. On its walls the story of the grain lies from its beginnings to its development at the Soconusco region. There are Displayed some of the first objects that accompanied the creation of fortunes with the aromatic planting. Here you will learn the process that is behind this strong aroma, good body and delicious flavor that only a cup of Santo Domingo’s coffee can provide.
The traditional gastronomy is grilled food that is ser-ved in the traditional brazier, at the center of your table where it awakens your five senses: you can see and hear how the rich beef, the bacon, the chorizo (traditional regional sausage) and the longaniza (another traditional regional sausage), seasoned with green peppers and onions, finish their cooking in front of you; their delicious aroma whets the appetite and the braces pro-vide a pleasant warmth in the mild afternoon. I assure you, that your body will thank you for such succulent food that from the second floor you can delight while you enjoy the unique scenery at 800 meters over the sea level.
The Santo Domingo Tourist Center is where all the fun begins: doing the guided tours around the coffee farms and the
fascinating architectural jewels of European style (product of the wealth that these trees provi-ded); also by visiting the many waterfalls, such as Muxbal and Chocoyera. The center is a necessary step to eat and to rest on your ascent to the sum-mit of the Tacana volca-no which is over 4000 m high.
The parking lot is reached by a path of palm trees, which also leads to the coffee mill, a construction from those times German made that nowadays is another at-
traction to the place. It is certainly an enigmatic resort full of ad-venture and fun. Come and enjoy nature and discover the mys-teries that are enclosed inside the Restaurant Casa Grande.

PIEDRAS qUE CUENTAN SU HISTORIA

n the land of Okjamü, (“Northern Sun” in zoque), stands in the heart of the green valley, the majestic Temple of Santo Domingo de Guzman. Regardless its wounds from the long battles against
time, today each of the stones of this magnifi-cent colonial buildings tell us its story.
Since imme-morial times, in this land it was located one of the most important zoque centers. During the re-ign of the bloody Aztec emperor Ahuizotl, the natives were subdued by these warriors who named the region Tec-patlan, which in Nahuatl means “place of flints” which latter adopted the Spanish form of the name as we currently know it today.
With the Spanish conquest, the Dominicans decided to concentrate five near-
by villages and erect a convent there. Under the direction of fray Antonio of Pamplona, the Indigenous people were forced to work in the construction of this fascinating architectural gem. The zoque hauled stones for a distance
of 4 km using the human chain technique; in this te-chnique humans stand in a row and the stones are passed from hand to hand; stones that today are part of this awesome place. It was the eighth convent built in the territories of Chiapas and Guatemala.
When the building was finished four bells were granted to it and it was also built a pillory (a column of 1.5 m in height and width), whe-re they tormented sinners who missing church three
Sundays. This complex consists of a Catholic Church and a former convent with a courtyard, plus a garden. Previously there was a large silk-cotton tree that is believed to be contem-porary to this building.

The Temple of Santo Domingo (a colonial building over 400 years old) has a sin-gle shed; its architecture is alchemy of Mude-jar, Renaissance and Baroque, with a uniquely designed tower that blends Spanish and Arabic elements. The bell tower has a Gothic vaulting, at the bottom of it the baptismal was located and now it is laying in one of its high walls in pieces after being destroyed by looters who believed inside it there were treasures.
Next to the temple the former con-vent is located; it protects a beautiful collection of sacramental silverware that was produced in Chiapas and Guatemala during the colonial era. The inner courtyard is surrounded by half

laced into bags the small pieces and the larger portions on corn leaves, the taste is the same: a mild sweet-ness. It is a handmade product in-
troduced many years ago by the Spaniards that in the Mexican land people give their own identity in the presentation and the in-gredients. It is prepared with Panela (it is made with sugar cane syrup) which is dissolved in water to the fire in a pan. After being dissolved a thick dark brown liquid is formed to which a few drops of lemon are added and then it is passed through a strainer made from a can-vas.
While it is still warm the dough of a gummy consistency that was left on the canvas, it is taken with the hands and the cra-ftsman begins to pull it from the center of the body to the arms length, with this stretching process the brownish pulp takes a bright tone, every time he pulls the candy it becomes in-creasingly clear, no dye is applied, only with this procedure the candy changes color un-til it turns white. After this process is finished peanut is added inside and carmine colored sugar is sprinkled on it. It is a sweet memory of the culinary magic of our state.
